Peanut, Black-eye beans Soup, Chicken feet, Pig stomach (雞腳豬肚湯 – Fa sun, mei dau, gai geuk, ju toh tong)

Ingredients:

  • 1 bag chicken feet (~1 lb)
  • 4 pig stomach tips (ju toh jim) (if no tip, then 2 whole pig stomachs)
  • 1.5 lb soup pork (sai see gwut), in large chunks
  • 2 handfuls peanuts
  • 2 handfuls black eye beans (mei dau)
  • 1 dried mandarin peel (陳皮) (1 peel = 3 petals), soaked 1/2 hr
  • 1 tbsp very course white pepper (basically whole, but cracked)

Directions:

Clean:

  • Put on your gloves. All you need are scissors today.
  • In the sink:
  • Cut the finger nails off the chicken feet. Transfer to a plate and set aside.
  • Cut the pig stomach longitudinally to open it up and make it flat. Cut off all the fat.
  • To clean the stomach, lay the pieces of stomach flat in the sink and scatter 1 tsp salt on one side. Rub. Turn them over and scatter 1 tsp salt on the other side. Rub it all together like washing clothes. (To “la” it)
  • Plug the drain and cover the stomach with water. Rinse and drain.
  • Lay the stomach flat in the sink again and scatter 1 tsp corn starch. Rub. Turn them over and scatter 1 tsp corn starch on the other side. Rub it all together like washing clothes.
  • Plug the drain and cover the stomach with water. Rinse and drain.
  • Transfer the stomach to a plate.

Pre-boil (chuet suey):

  • In a large pot, boil half a pot of water.
  • Boil the chicken feet first for ~3min. Transfer to a plate. Dump into the sink, plug the drain, and rinse twice with cold water. Transfer back to the plate, rinsing the plate first.
  • Boil the soup pork for ~3min. Transfer to a plate. Dump into the sink and rinse twice. Transfer back to the plate.
  • Boil the pig stomach for ~3min. Transfer to a plate.  Dump into the sink and rinse twice. Transfer back to the plate.

Cooking:

  • Put all the meat into the pressure cooker.
  • And put everything else in as well: peanuts, black eye beans, mandarin peel, white pepper
  • Fill the pot with water to maximum. You may use boiled water to make it cook faster.
  • Turn on the pressure cooker to “soup” setting and “plus” time. It will take about 15min to boil and then 40min to cook.
  • Add salt to taste when done (~1.5 tsp), and filter the oil from the top.

Update:

  • I made this again with good results using 2lb chicken feet (~11 pairs) and 1.5lb pork neck bones. Remember to blanch them first.
